A Quick, Yummy, Low-Cal Breakfast

Goood morning, everyone and happy Monday!

I just made a delicious and hearty breakfast that’s under 300 calories.
Here’s what you’ll need:

  • 2 cage-free eggs
  • 1 tablespoon of unsalted organic butter
  • A heaping handful of baby spinach
  • 1/2 a Roma tomato (sliced horizontally)
  • Some lemon juice
  • Black pepper

Heat the butter in a skillet over medium-high heat. While that’s warming, lay the spinach on a plate, drizzle with lemon juice (and a few capers if you like them), and then top with the tomato slices. Once the butter’s warm, quickly quick your eggs sunny side up and then literally dump the skillet of eggs on top of the tomatoes and spinach. Sprinkle with black pepper and you’re done! It takes all of about 5 minutes and it’s tasty, healthy, and a great way to start your day.

Nutrition Breakdown: Butter (102 calories); Eggs (140 calories); 2 tbsp Lemon Juice (8 calories); Spinach (7 calories); 1/2 a Roma Tomato (18 calories); Pepper (0 calories).
TOTAL CALORIES: 275

Here’s the nutrients you’re getting:
Good fat, healthy protein, nutrient-dense carbs, a sizable portion of Vitamin C (spinach + tomato + lemon juice), a ton of Vitamin A, Niacin, Zinc, a great serving of Dietary Fiber, Vitamins E and K, Lycopene, some Iron, Selenium, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.

This is a nutrient-packed breakfast, low in calories, and I am stuffed after having eaten it. Bon appetit!
