A Side of Pickles? Yes Please!

I loooooooooooove pickles. Like it may be gross how much I like ’em. So when Adia told me we were doing a pickle recipe for our month of Madness, celebrating college basketball, I was OVER THE MOON. Salty, crunchy, and tart, I like me some pickles. It’s not a competition for who likes them more, but if you like pickles even a fraction of the amount I do, then you’re totally going to want to make these for your game watching/gastronomic pleasure. Just don’t watch March Madness with me because I’ll totally eat them all and leave you with none. Sorry, but I’m not sorry. ;)

Game Day Pickles

Recipe by Addie of Addie’s Confetti Kitchen
Heads Up: You will need to make this recipe one week in advance!

4 cups water
2 cups white vinegar
2 tbs kosher salt
1 tsp sugar

12 pickling cucumbers
1 head of garlic, broken up into cloves and peeled
A bunch of dill and a few peppercorns

Directions

Combine water, vinegar, salt and sugar in a medium sauce pan. Bring to a boil until the sugar and salt dissolve. Remove from heat and allow to cool.

Place the cucumbers into jars (samples for sale here) and add the liquid, garlic and peppercorns. Be sure there is enough brine (liquid) to cover the cucumbers completely. Seal so the jar is airtight and refrigerate for one week. Pickles will last for 4–6 weeks.
