It’s March, which means we are almost full on into the madness. The famous — or perhaps INfamous — NCAA Basketball tournament is scheduled to begin March 16th (and Duke is currently in 4th place overall…just sayin’). Like the spring weather around the corner, I’m starting to feel like a warm ray of sunshine as my alma mater heads into the biggest games of the season in an excellent position to take the top spot.

As a tribute to the upcoming two weeks of constant dunking, I wanted to share a recipe for a healthy dip you can dunk veggies, crackers or chips in. Hummus is a traditional middle eastern dish known for it’s positive effects on your health. Healthy protein and fats as well as iron and fiber make this an excellent snack to serve over the tournament while keeping you in shape to last the length of the tournament.

Slam Dunk Cilantro Carrot Hummus

Ingredients

1 cup cooked and drained garbanzos (or 1 can, rinsed)
1 cup chopped carrots, steamed
¼ cup tahini
Zest of 1 lemon, finely chopped
¼ cup fresh lemon juice
1 to 3 tsp. honey
2 to 4 garlic cloves, minced or pressed
Salt
1 bunch chopped cilantro

Preparation

Place the garbanzos, carrots, tahini, lemon zest, lemon juice, cilantro, honey, and garlic in a blender or food processor and purée until smooth.

Add salt to taste, and garnish with cilantro. Serve with sliced vegetables, crackers, or chips for dipping.
