>Open 7 days a week. >Open early and late when required. >Catering to the customer and understand the customer is (almost) always right. >Strive to serve up consistency, creativity and be relentless about presentation. (Exactly like Derek in the picture I took at FARM in Calgary) You gotta try this place by the way. They get it!!!! >The ability to slow down the pace if the customer/client needs it or move things quickly if urgency is a part of the plan. >Know the menu and inventory of options well and be willing to pull something together that may not be listed. >Recognize and celebrate special events for your customers. Nothing says you care better than knowing a birthday, anniversary or surprising them with something in the mail for the birth of a child. >Having a well run system but the ability to customize to meet the customers’ needs. >They love kids even if they are screaming in the back seat or a seat at the bar. >It’s impossible to run a restaurant or a great “sales” business on your own. >Have a team that’s amazing and cares as much or more about all of the above and will work late with you when needed. >Always always always greet the customer with excitement. >Know that repeat and referral customers will make you or break you in either business.
