Chilaquiles : Mexico’s Breakfast Gem Celebrated Globally

A delicious dive into one of the world’s best breakfasts and where to find the finest in Mexico City

I recently learned that Taste Atlas awarded the “Chilaquiles”, one of my favourite Mexican breakfast dishes, with the distinguished title of the 4th best breakfast worldwide. This recognition not only highlights the dish’s exquisite flavours but also underscores its cultural significance and versatility. Let’s dive into the origins, varieties, and where to find the best chilaquiles in Mexico City.

The Origins of Chilaquiles

The term “chilaquiles” is derived from the Nahuatl word “chīlāquilitl,” which means “chili and greens.” This etymology points to the dish’s deep-rooted presence in Mexican cuisine, tracing back to the Aztec civilization. Historically, chilaquiles were a practical and delicious way to use leftover tortillas, ensuring nothing went to waste.

Crafting the Perfect Chilaquiles

At its core, chilaquiles consist of crispy tortilla chips simmered in a vibrant sauce until they achieve the perfect balance of tender and crunchy. The sauce, which can be red (rojo) or green (verde), is the heart of the dish and is made from a variety of ingredients that impart distinct flavors.

Red Chilaquiles: The red sauce is typically made from tomatoes, dried red chilies (such as guajillo or ancho), garlic, and onions. This variety offers a deep, smoky flavor with a slight sweetness.

Green Chilaquiles: The green sauce, on the other hand, features tomatillos, green chilies (like serrano or jalapeño), cilantro, and garlic. This sauce is tangy, fresh, and slightly spicy.

The Endless Variations

One of the beauties of chilaquiles is that you can adapt them to suit different palates and dietary preferences, turning them into a versatile dish for breakfast enthusiasts around the world.

Protein Additions: Shredded chicken or beef are popular choices, adding a hearty dimension to the dish. For a vegetarian option, black beans combine impeccably and for those who love eggs for breakfast, a perfectly fried egg will make your papillae sing.

Cheese or No Cheese: Crumbled queso fresco or cotija cheese can be sprinkled on top, adding a creamy, salty touch to the spicy and tangy sauces.

Garnishes: Common garnishes include sliced onions, fresh cilantro, avocado slices, and a drizzle of crema (Mexican sour cream). These toppings not only enhance the flavour but also add texture and visual appeal.

The Best Chilaquiles in Mexico City (from the places I have tried out)

Mexico City, a culinary paradise, boasts some of the finest spots to indulge in this celebrated dish. Here are a few of my favourite places when it comes to breakfast and more particularly if you want to try the chilaquiles:

Peltre:

A small restaurant in the pleasant neighborhood of Condesa, Peltre is known for its delicious breakfasts and, as the name suggests, the use of plates and cutlery made out of “peltre” (steel with a blue vitrified cover), although other materials are available. I tried the chilaquiles, and I was not disappointed. The chef not only uses very fresh ingredients, but he is also very generous with the portions. I still wanted to have a concha for dessert (sweet bread that looks like a shell), but I would have to wait until my next visit, as I could hardly finish the chilaquiles.

El Cardenal:

Tucked away in the historic centre, El Cardinal is more than a restaurant, it’s an institution. They serve chilaquiles that embody the essence of traditional Mexican breakfast, complete with a side of hot chocolate or freshly brewed coffee.

Saks:

This elegant restaurant, situated in the commercial and high-end area of Polanco, is a treat for both the eye and the palate. The decoration is breathtaking (even the washrooms showcase beautiful white orchids), and not surprisingly, they have a lavish take on chilaquiles. The chilaquiles verdes topped with a tender piece of arrachera (skirt steak) are just to die for and one of the most popular breakfast choices that Saks offers! If you still feel like a sweet treat after this copious breakfast, try the pan de elote (corn bread) — it’s out of this world!

During one of my trips to Mexico (after I moved to France), I stayed a few days at Hotel Parque Mexico. This colorful building, tastefully decorated in a genuine Mexican style, is located in Condesa, in front of Parque Mexico. The terrace on the top floor is transformed into a peaceful haven for fine dining but also for great breakfasts. The food is amazing, and the neighboring trees gently bend their branches to form a green roof above the diners. Magical!

Perched atop a historic library near the Zócalo, this hidden gem offers breathtaking views of Mexico City’s main square and the archeological sites. The chilaquiles here are a perfect blend of tradition and innovation, making it a must-visit spot for both locals and tourists. Enjoy your meal while soaking in the vibrant atmosphere of the city center.

Chilaquiles have long been one of my favorite breakfast dishes, a sentiment shared by many who’ve experienced their magic. Personally, I adore green chilaquiles with chicken, cheese, and slices of onion. The tangy green sauce combined with the savory chicken and fresh onion slices is a delightful way to start the day. Equally, red chilaquiles topped with a perfectly fried egg is another of my favourites , the smoky richness of the red sauce complemented by the creamy yolk is simply irresistible.

The recognition of chilaquiles by Taste Atlas as one of the best breakfasts in the world is a testament to the dish’s rich cultural heritage and culinary excellence. Whether you prefer them with a fiery red sauce or a zesty green one, chilaquiles are a celebration of flavors and textures, capturing the heart and soul of Mexican cuisine.
