Agedashi-tofu

‘Agedashi-dofu’ literally means ‘fried tofu in fish broth’. Tofu is diced into small pieces and deep fried. It is then boiled in dashi: fish broth with soy sauce, mirin, and rice wine. Grated Japanese radish and dried bonito shavings are placed on top, then served. When you put it in your mouth, be careful not to burn yourself. Hot dashi jumps out from the fried tofu and the crispy flavor spreads in your mouth. The sweetness from the mirin, the umami from dashi, and the soy flavor from tofu and soy sauce bring happiness in your mouth. Dry sake goes well with the dish.
