“Amadai (tilefish)” is a small perciform marine fish, which lives in the Japan Sea along the north coast of Kyoto and Fukui prefecture. It is called “guji” in their dialect which means “square-shaped head sea bream.” “Amadai” means “sweet sea bream” in Japanese language. Its meat is soft and it has slightly sweet and refreshing flavors.

Sliced Amadai flesh is pickled overnight in Saikyo-miso (Kyoto style sweet bean paste) and then grilled. The sweet taste and the savory smell of the miso goes well with the soft texture of the meat.
