Buri-shabu is the best way to eat fatty yellowtails in winter
Buri (yellowtail) is a large fish that is very popular in Japan, especially when it becomes fatty in winter. It is commonly eaten raw(sashimi). However, one cannot eat a lot, as it feels heavy in the stomach.
Shabu is an abbreviation of “shabu shabu”, which is well known as preparation for beef. A piece of sliced buri is dipped into hot broth in nabe (a Japanese pot) with chopsticks, and moved slowly inside the broth for a few seconds. Then it is eaten with ponzu sauce. Shabu-shabu originated from an onomatopoeia that describes the sound created when meat is moved in the hot water. Protein on the surface of the meat coagulates and prevents melted fat from getting out. The melted fat spread in your mouth, which enrich the flavor. It is also gentle on your stomach. Fresh vegetables go well with it.
