Chanpon is a noodle which originated from a Chinese town in Nagasaki during the Meiji period. The name means ‘Have you eaten?’ in Cantonese. It is said that Chinese exchange students often ate Fujian style noodles and the Japanese misunderstood them, thinking they were stating the name of the noodle. The noodle is thicker and softer than usual Chinese noodles, which is made with special lye, called Tou-aku. The soup is made from pork, seafood and a variety of vegetables. Chanpon also means ‘to mix’ in Japanese as chanpon contains a lot of ingredients,.
