“Fukumen” is a colorful dish which commemorates happy days in Uwajima, Shikoku, Japan

“Fukumen” is a local specialty from Uwajima, a middle-sized city with population of 92 thousand on the Shikoku island of southern Japan. Fukumen contains several kinds of delicious ingredients taken from the mountains and the sea, as Uwajima is surrounded by nature. Various natural ingredients, such as fish flakes, orange peel and green onion are chopped into pieces, then placed in pleasing arrangement on noodles made from konjac. It is said that the farmers in Edo period started to use konjac noodles instead of boiled rice, as rice was so extravagant that eating it was prohibited by the lord. “Fukume” means “to chop” in Uwajima dialect.

It is mixed well and served. It is sad to destroy this beautiful pattern of the food, but there is no choice. The mixed flavors of these ingredients and the elastic texture of the noodles are very unique. Please do not forget to order fukumen beforehand if you want to try it. It takes a lot of time to prepare as you can imagine.
