Goya has three times as much Vitamin C as lemon

Goyo (bitter melon) is a local vegetable, and it originates from Okinawa. Goya is commonly fried with tofu, eggs and pieces of cut spam. Katsuobushi is put onto it, and the dish is then called “Goya Chanpuru (chanpuru literally means “to mix” in Okinawa dialect)”. Eggs reduces the bitterness of goya, so it becomes easier to eat. Goya Chanpuru is often eaten in summer as goya grows only in the summer and vitamin C is needed during hot days.
