Iimushi

“Ii-mushi” literally means “steamed rice.” Meat and/or vegetables are put on top of a ball of steamed mochi-gome (glutinous rice), and it is all steamed in a bamboo food steamer. Ii-mushi is commonly provided at the end of a washoku (Japanese dish) full-course dinner. Thick sliced pork back meat with soy sauce and sugar are well cooked and then laid on the rice ball as shown in the photo above. The soft texture and sweet taste of the pork, and the sticky texture of the rice are a good combination.
