In Japanese language, the dishes such as sushi, tempra, syabu-syabu are called “A kyu gurume (rank A gourmet)”, which are expensive and extravagant. In contrast, “B kyu gurume” means “cheap everyday food.” B kyu gurume festivals are often held throughout Japan, and a lot of different kinds of local and cheap dishes are served.

“Nikumaki onigiri” is a small fist-sized rice ball that is wrapped in slices of pork meat and bacon. It is then baked on a hot iron plate with sweet soy sauce. It is a very popular dish in those festivals, as the flavor of baked meat stirs up one’s appetite and the combination of hot meat juice and rice is perfect.
