“Sanma” is one of the most popular fish in Japan. It is slender and its name originates from an old Japanese language which means “a long and narrow fish”. It is usually grilled and eaten throughout Japan. People feel like autumn has come when they eat it. Sashimi (fresh fish) of sanma was eaten only in areas close to the north of Japan sea where it lives, as it quickly goes bad. Nowadays, thanks to the latest transportation technology, sashimi of sanma can be found all over Japan. Its flesh is refreshing, and its fat has a rich flavor so soy sauce with ground red pepper goes well with it.
