We Japanese are good at importing foreign cultures and customizing these to our own style. For example, Chinese characters were brought over from China in the 3rd century AD. Not only did the Japanese absorb Chinese characters into Japanese culture as Kanji, we also invented two types of the original letters out of them -Hiragana and Katakana.

“Pote-sara” stands for portmanteau of “potato salad”, which is a dish in European countries. In Japan, pote-sara that is provided in Izakaya are customized to go well with alcohol, so it has a saltier, spicier flavor and is usually in a smaller portion. Pote-sara is often ordered as the first dish in Izakaya. Typically, it is very popular on the menu and is the touchstone of chef’s ability.
