In izakaya(Japanese-style tavern) or ryoutei (a traditional Japanese restaurant), “sahimi no moriawase” is a very popular dish. Several kinds of seasonal fresh fish are served as sashimi, and you can enjoy the different tastes ans textures of them. The edge of good sashimi is sharp when the fish is fresh and when the skill of the washoku (a Japanese) chef is good. Their knives are always well honed on a whetstone and thus they do not destroy the fish themselves in the preparation. The surface of the sashimi is so smooth that you can feel the pleasant texture with your tongue.
