“Surinagashi” is a traditional Japanese soup made from seasonal vegetables
“Surinagashi” literally means “to be ground and poured” in the Japanese language. Seasonal vegetables such as tomato, pumpkin or corn are ground, poured into hot fish broth, and then well mixed. In the photo above, a piece of steamed sea bream is placed at the center of a bowl, and green peas suhinagashi is poured in. The texture of the soup is very smooth, and the odor of the peas is so refreshing. The meat of the fish is very soft, and its umami is enhanced by the soup.
