Tori sashi

Torisashi is raw chicken meat. Tori means a bird and sahi is an abbreviation of sashimi, meaning “raw fish and meat”. The white-pink meat at the front is chicken breast, which is low in fat and has a tender texture. The red meat is chicken gizzard and it has light crunchy texture. We eat torisashi with soy sauce and ginger, which bring out its sweet taste. We eat not only raw chicken, but also raw eggs. Of course, we only eat fresh ones! Any Salmonella bacteria in eggs are killed in factories. I was very surprised when I discovered raw eggs are not eaten in other countries, as I will choose tamagokake gohan, a raw egg mixed with hot rice, for my last supper in my life.
