Hiyashi-chuka

“Hiyashi-chuka” literally means “chilled Chinese noodles”. However, it was invented in Japan. Chilled Chinese noodles are provided with sliced ham, cucumber, onion, and thin omelet on the top. They are mixed in a bowl with a special sauce that is made of soy sauce, chicken soup, vinegar and sesame oil. Mayonnaise goes well with it as well. Hiyashi-chuka is eaten commonly in summer as it is too cold to eat in winter. The sour taste of the soup and flesh vegetables whets your appetite in humid and hot days in Japan. At the beginning of the summer, shop owners announce that Hiyashi-chuka is now bring served by putting up a notice that says “we have started Hiyashi-chuka” on the wall of their restaurants.
