In China, we like to try a lot of things. Seafood is one of our very favorite foods, so we will think about how to cook it well. Today, I want to share with you a very easy dish with seafood. Hope you will enjoy it.

  1. When you get the razor clams, you can wash them with some salt water, put about 20g of salt in the water, soak for 10–15 minutes, and then they will spit out the sand.
  2. Secondly, boil a pot of hot water, if you have ginger, you can add some to the pot, or you can use some pepper instead. Then put the razor clams in the water and keep the water boiling for 8–10 minutes. This time can be adjusted with the razor clams, if yours are under 1kg, the time should be less.
  3. While all razor clams are opened, put them out and go into cold water to cool down. Then you can clean them.

  1. For the omelet part, I use three eggs with 5g salt. Mix them up together with your fork or electric egg beater.
  2. After mixing, you can use a strainer to strain the egg mixture. If you don’t will to do this step, just pass it.
  3. Also, you can add some vegetables you like to the egg mixture, any kinds of vegetables are okay, but which can be cooked quickly are better.

  1. Here is a Chinese-style sauce, you can use any salty sauce instead.
  2. It needs 10ml soy sauce, 10ml oyster sauce, 8g pepper, 4g salt, and 20ml water, then mix them up.
  3. Another tip, if you have fish sauce, which is usually for South-Asian dish cooking, you can add 10ml instead salt and water in step 2. It will make the mixture more flavorful.

  1. Okay, after all the preparation, we can go to cook now.
  2. Heat your pan firstly, some oil in the pan, then you can put the egg mixture into the pan.
  3. Fry the eggs for 2–3 minutes with high heat, during which time you can stir the eggs with a spoon to give them more texture, which will give the finished product a richer texture.
  4. When the omelet is 80% okay, you can put the razor clams on the omelet. Then add the sauce too.
  5. When all the steps are completed, you can cover the pot and simmer for 2–3 minutes on medium heat. When you check that the omelet is all cooked, you can take it out of the pot.
  6. Enjoy your dish with your family.
