At $4.25 Per Dozen, Eggs Are Still Very Underpriced
We’ve taken them for granted for centuries
Let’s talk eggs.
I’ve said for years, “I can’t believe how cheap eggs are.” A random observation, I know, but as an economist who eats at least 4 eggs daily, I couldn’t help but notice it.
The price always seemed to defy the laws of supply and demand.

My perspective on eggs is likely a bit skewed from the average consumer. In economics, you’d say I have an inelastic demand for eggs. An increase in price, to me, has little to no effect on how many I will buy.
Regardless of how I feel about the price of eggs, the economics behind them more than support the idea that we’ve been getting an awesome deal on these for centuries, but that’s possibly coming to an end.
