Pumpkin isn’t just for Halloween — but a staple you should take advantage of
Since it’s heading close to Halloween, it’s not uncommon for pumpkin sales to go through the roof.
Unfortunately, many pumpkins are only given a spot on the mantlepiece as a form of Halloween art, in a traditional candlelit form.
But pumpkins aren’t just a showcase of creativity — eating pumpkins regularly provides some excellent benefits.
Think of pumpkin as a hidden powerhouse of many nutrients, like fibre and potassium, which most people simply aren’t getting enough of.
Fibre is one that many people still fail to meet the minimal requirements, usually due to the popularity of a westernised diet.
Although pumpkin is trendy in baked goods, they are delicious when roasted into cubes or used in soups and stews curries and are delightful cold in your salads (my favourite!).
I can’t speak highly enough of pumpkin, as it’s a staple vegetable in my meals all year round.
