Paneer Cheese Pakoras

Good mornings are made of these, breakfast with deep-fried cheese

Paneer is a soft cheese made by curdling milk with an acid, such as lemon juice or vinegar. It doesn’t melt and is soft and spongy.

It is eaten fresh or as in this case, deep-fried after marinading in chickpea batter — powdered chickpea flour, salt, turmeric, and chili powder.

Left, oval bowl: chickpea powder, salt, turmeric, chili powder, and water to mix. Right, round plate: cubes of paneer cheese. Photo by the author.
