Quiche is a great dinner choice and here is why. Paired with a salad, it makes a well-rounded, quick and simple midweek meal.
Using a basic recipe, you can easily switch up the ingredients depending on what you have on hand to liven up the dinner doldrums. Most commonly thought of as a brunch item, I find that a quiche is a welcome change once every few weeks and can be a light, fast dinner when you are pressed for time. What is especially nice about the quiche recipe I am sharing is that it calls for a prepared frozen pie shell, which usually comes in a pack of two. So, it is a no-brainer to double the recipe and make a second quiche that can be frozen for another time or used as lunch throughout the week.
Here is the recipe I use, but feel free to switch up the protein, cheese or veggies and customize it to your liking (or to use up whatever might be going bad in your refrigerator)!
Easy Quiche
Ingredients:
4 eggs (or small container of egg whites)
1 cup shredded Swiss cheese, divided
3/4 cup skim milk
6 slices of deli ham, cut into 1/2 inch slices
