Moker worked in Fort Worth, Texas, for five years. The gal who ran the office, answered the phones, listened to the *sob* stories of the younger employees, negotiated blind dates, and knew everyone who was anyone, was named, coincidentally, “Texas.” And boy, Texas could cook!

Texas’s specialty, which she whipped up and brought in for her office mates to share every once in a while, was a luscious, larrupin creation called Banana Split Cake.

Come to think of it, but it’s funny that she called it a cake, ’cause it has no flour in it whatsoever, and you don’t bake it. But is sure is sweet. Nothing was too sweet for Texas, our Texas.

In fact, Texas’s Banana Split Cake is the perfect way to finish off a dinner dedicated to the Lone Star State.

Texas’s Banana Split Cake can be the finale to an evening devoted to cuisine of the state and the creation of one good friend who knew how to tease a sweet tooth.
