Andhra Chicken Curry Revisited

Before we dive into the world of Andhra Biryani, you might remember my previous post about Andhra Chicken Curry. It's a spicy and smoky dish that beautifully represents Andhra Pradesh's culinary traditions, much like the Biryani we're about to explore.

Recipe: Andhra Biryani

Ingredients:

2 cups of good-quality rice

500g of chicken or mutton, cut into pieces

2 large onions, thinly sliced

2 tomatoes, finely chopped

2 green chilies, slit

2 tablespoons of cooking oil

1 teaspoon of ghee (clarified butter)

A few whole spices like cinnamon, cardamom, cloves, and a bay leaf

Ground spices like turmeric, red chili powder, coriander, cumin, and garam masala

Salt for taste

Fresh coriander leaves for garnishFried onions for garnish (optional)

For Marination:

1 cup of yogurt
1 teaspoon of ginger-garlic paste
Juice of one lemon
A pinch of red chili powder
Salt as needed

Instructions:

  1. Marinate the Meat: In a bowl, mix the meat with yogurt, ginger-garlic paste, lemon juice, a pinch of red chili powder, and some salt. Let it rest for about 30 minutes.
  2. Prepare the Rice: Wash the rice, soak it in water for half an hour, and then drain it.
  3. Cook the Rice: Boil the soaked rice until it’s mostly cooked but still slightly firm. Drain it and set aside.
  4. Heat the Spices: In a big pot, heat some oil and ghee. Add the whole spices - cinnamon, cardamom, cloves, and a bay leaf. Let them sizzle for a moment.
  5. Sauté the Onions: Add the sliced onions and cook until they turn golden brown.
  6. Add the Meat: Toss in the marinated meat and cook it until it’s no longer pink.
  7. Add Spices: Sprinkle in the ground spices - red chili powder, turmeric, coriander, cumin, and garam masala. Cook for a few minutes until the meat is nicely coated with these spices.
  8. Layering: Layer half of the partially cooked rice over the meat. Sprinkle some fresh coriander leaves. Repeat the process with the rest of the rice.
  9. Dum Cooking: Cover the pot with a tight-fitting lid or seal it with dough to trap the steam. Let it cook on low heat for about 20-25 minutes. This helps the flavors mingle, and the rice fully cooks.
  10. Garnish: Once it’s ready, garnish with fried onions if you like and some fresh coriander leaves.
