This year, I’ve decided to break away from the usual “ suffering” holiday routine.

No more silently observing my family and friends indulging in delicious gluten-filled sweets while I internalize the struggle.

With a polite smile, I typically decline the offered slice of cake circulating the table with a simple:

No thanks, I can’t!

Instead, this time I’ll create my own dessert. I encourage you to join me, especially if you have gluten sensitivity or, like me, if you have Celiac disease. Over the years, I’ve mastered the art of baking delicious desserts without any gluten.

Let’s not just wish for desserts, let’s bake them!

As Christmas is just around the corner, I’ve chosen the Bûche De Noël (or Tronchetto di Natale in Italian): a sponge cake filled and covered with frosting, rolled to resemble a festive log.
