This is the second time I’ve made this. I realized that I could save a lot of time and effort if I bought squash that was skinned and cut in half. The squash is the only thing I needed to prepare — the rest was just thrown in the crockpot (I used frozen onions).
Put the entire recipe in the crock pot
It’s a hearty soup and it makes about 10 or so servings.
Buy the pre-cut squash!
I cooked this on low for 8 hours and had to let it cook another 2 hours to soften the squash. Next time I need to cook the squash a little bit before I stick it in the crockpot.
