Butternut squash, quinoa & chicken stew

A simple and hearty soup from the crockpot

Time to create

30 minutes prep time / 8 hour cook time (crockpot)

This is the second time I’ve made this. I realized that I could save a lot of time and effort if I bought squash that was skinned and cut in half. The squash is the only thing I needed to prepare — the rest was just thrown in the crockpot (I used frozen onions).

Alterations

No olives
Put the entire recipe in the crock pot

Taste

Perfect!

It’s a hearty soup and it makes about 10 or so servings.

Lessons learned

Buy the pre-cut squash!

I cooked this on low for 8 hours and had to let it cook another 2 hours to soften the squash. Next time I need to cook the squash a little bit before I stick it in the crockpot.

What it really looked like

It’s a hearty and filling soup!
Just about everything you need…note the prepared squash.
This fills the crockpot!
