Simple is Best

Yes! We’re still alive and yes I haven’t written here in a while, but that doesn’t mean we haven’t been eating great food, or preparing fantastic recipes, or we are dead. Far from it.

I have no excuses to give. To be honest, I’ve just been kicking back and not writing that much. I have been publishing a newsletter and hosting a podcast, but as for writing I’ve let it take a back seat for a bit. No, real reason except I can do that.

With all of that out of the way I thought I would get back to this blog and post something I made the other night that is simple and best. My Grandmother would always say “Semplice è meglio”, simple is best and I have to agree. When trying to figure out a meal for us I sometimes think easy, but it doesn’t always work out that way. As you’ve seen from other posts on this blog.

Today though I have a simple, best, and easy recipe that anyone can makeNo,. On top of that it taste fantastic and everyone will be happy with this meal.

This is all about tomatoes, fresh basil, olive oil and garlic. Possibly a little salt and red hot pepper if you so desire. Of course pasta, spaghetti to be exact is the key ingredient. I prefer spaghetti with this recipe, only because I like spaghetti more than pasta. Although I have been known to use penne pasta with this and it turns out great as well.

1. Chop up about 4 to 5 fresh tomatoes (depending on the amount of spaghetti you’re preparing. I used 2 pounds and 5 tomatoes)

2. Chop the garlic and sauteé it till it is translucent. Add salt, crushed red hot pepper, fresh basil leaves and oregano to the oil and garlic.

3. Boil your water and when ready add your spaghetti

4. Make sure to check your sauce. Do not add sugar to this sauce. If anything add red wine if you want to sweeten it up, but please no sugar.

5. Once the spaghetti is ready, strain and pour into a pasta bowl or whatever you use. Pour your sauce over it, sprinkle some parmesan cheese over and mangé or eat. It’s best when hot. Then again it’s good the next day for leftovers warmed in the microwave or on the stove top for a few minutes. Don’t overcook it.

6. Enjoy and tell others about it. You’ll be the hit of your family and friends.
