What I Cooked The Other Night

It was a perfect recipe before I made it imperfect

The other night I decided to try a recipe I had seen posted on Facebook. It was an Italian dish, so it had that going for it. I just needed to make some changes.

The basic recipe called for chicken breast stuffed with a pizza like filling made up of spices, marinara sauce, pepperoni, and mozzarella cheese. Knowing that the kids are not exactly fond of pepperoni especially if it’s spicy, I decided to switch off and use salami.

The salami I chose was a brand we get at a local store that is made with red wine. It is smooth, moist and it helps put the kids to sleep early. I’m only kidding about that last part about the kids sleeping early. Realy!

Anyway, after stuffing the inside of a butterflied chicken breast, it also wants you to cover the top of the breasts with sauce and cheese. I took that a step further and covered the top of the breasts with the same as what was inside. Spices, cheese, sauce, and salami.

The ending result was my imperfect recipe of a perfect recipe that created the perfect meal for that evening.
