Unbelievable Chicken Meat Loaf

Meatloaf is an ancient dish, If you don’t trust me I know you trust wikipedia. It was mentioned in ancient Roman cookery! Say whaaa.. This meatloaf is usually made out of minced beef, but Indians love cows in a different way compared to rest of the world. Yes we worship cows, thats how the term “Holy cow” came into usage. Im not religious but I still don’t eat beef. I replaced the recipe with minced chicken and like every other recipe I have here I fused it with indian spices. Serves: 4

What You’ll Need

Finely Chopped Mint — 1/4 cup

Finely Chopped Cilantro — 1/4 cup

Finely Chopped onions — 1/2 cup

Ground Almond powder — 1/4 cup

Bread crumbs(Replace with corn meal or more almond powder for gf) — 1/4 cup

Ground minced chicken — 1 + 1/4 cup

All purpose flour (with or without gluten) — 1/4 cup

Chilli powder — 2 teaspoons (vary based on your taste)

Salt — 1 teaspoon(Vary this based on your taste)

Cumin powder — 1 teaspoon

Coriander powder — 1 teaspoon

Garam masala — 1 teaspoon

White pepper powder — 1/4 teaspoon(vary based on your taste)

Ginger garlic Paste — 1/4 teaspoon

Oil- 1 teaspoon

Cheese — 4 tablespoons(mas queso for me)

Marinara sauce — 1/4 cup

How We Did It

  1. Before we start cooking, pre-heat the oven to 350 degrees.

2. Now add our ingredients into one big mixing bowl one by one. Yes its that easy. Add breadcrumbs, chopped onions, almond flour, all purpose flour, minced cilantro and mint and finally our high quality chicken protein.

3. Once this is done lets go ahead and add our spices — cumin powder, coriander powder, chilli powder, garam masala, salt, ginger garlic paste. Now lets mix it all up till its a ball and use those muscles you want to build.

4. Oil a bread or loaf pan. I covered it up with foil because I am lazy. Yes its as simple as that. Once you oiled it, place the meat loaf till it covers the entire pan. This is not bread it not going to fluff up so feel free to go crazy filling it up.

5. Now pour some marinara sauce. I just used store brought marinara and put some cheese on the top.

6. Bake this for 20–30 minutes. This is minced chicken so you don’t have to go over board but you also don’t want to end up with uncooked chicken.

Bake 20–30 minutes on 300F

7. Once your timer starts beeping take that loaf out of the oven and place it on a pretty plate. Just kidding if you are hungry eat it however I want. My husband had to wait because I need a pretty picture so all you folks will click on it.

8. The best way to eat this is by cutting it up into slices and pouring some more hot marinara on the top.

This is a great gluten free, high protein, low carb dish. Its super easy to make. I make this as soon as i come back from gym, put that pan in the oven and take shower. Once I am out I have this awesome low carb dinner waiting for me with so less effort. These are some pro tips yo!!
