How Curly Kale flowers (Raab) Sexy’d up My Boring Potato Salad

The kale plants I bought and planted last week are already flowering, (aka dying) and I felt sad and didn’t know what to do with my dying plants.

I google flowering kale tops and it says they are called ‘raab’ and they show that the plants have “overwintered” and survived until spring, but are dying.

I am currently reading a veggie recipe book by @MicheleTrainer called “20 Secrets to Making a Boring Salad Sexy” and she has a section about edible flowers.

Since I was in the middle of making potato salad for dinner, I cut off the raab and sautéd the flowers in some olive oil to garnish the salad with them instead of using parsley.

It looks so pretty! Like a dish that would be served in a 4 star restaurant.

I taste the sauteed flower buds. They are delicious. They have a mild, nutty, sweet, fragrant flavor.

Michele cautions to test a small amount first in case you have an allergic reaction, but I ate a whole bud. But I’m Canadian tough! I am allergic to dogs and have a dog! I also gave a bud to my 20-something son to try and he liked the taste too!

Imagine if vegetables were made more interesting? Imagine if they were prettier, funner, sexier? More people would be inspired to eat them and those people would be healthier! Thanks Michele!
