JamCam feed works with super operation

Feeding a major event like Jamcam with 8,000 participants requires a well-planned logistics. In that case, it took six months of preparation to do everything, after all, tons of food a day. The menu was planned months ago, based on the inscriptions made, and that over time only increased.
Considering the Brazilian customs, the menu was based on the classic rice and beans. There were about 5 tons of rice, 17 tons of beans and 21 tons of animal protein, moving more than 146,000 meals in total. As for vegetarian, vegan and restricted food, about 9,000 meals were served. Counting began on January 3, when the first members of the International Service Team were already in the field.
The high numbers required a great deal of work. Producing 24 hours a day, the restaurant staff is divided into shifts to meet all the demand, as Vanessa Delboni, sales manager for Rafain, a food company, says: “We have finished dinner and are already preparing coffee , from coffee to lunch, and so we go all day,” she adds.
Serving around 8,000 meals over a 3-hour period, the team has the participation of 200 employees, both Rafain’s own employees and temporary staff. All received specific training for the best JamCam service. In addition to the staff, some EIS staff assists in the organization and orientation of the restaurant, optimizing queuing time.
Special food
Diversities are present even at feeding time. “Each meal at JamCam mobilizes a team of 68 volunteers, 5 of whom are responsible for coordinating,” explained Theresa Damaso of Sao Paulo, JamCam food coordinator. An area is reserved for special eating where foods and beverages for diabetics, celiac, lactose intolerant, vegetarians and vegans are located. Among youth and adults, 455 people with these restrictions are served both in the cafeteria and in outdoor activities (kits). The cafeteria has 2,200 chairs, so the need for the rotation of people. The records of the event were the mark of 4,000 people having lunch in 58 minutes and 2,200 in half an hour in space. The team also delivers snacks to those who remain in the outpatient clinic working or in care (inpatient).
