Ah, Japanese curry! So packed with umami, it’s hard to stop at just one helping. I am forced to admit that I have a curry addiction. And I have passed it on to my kids as well, from cooking Japanese curry in our home from the time they were barely old enough to eat solid food.
I will say that I can cook a mean curry, and I have perfected both technique and recipe over the years.
In Japan, there’s a popular notion that eating spicy food in the summer has a cooling effect on the body. There is some truth to that since if the food is spicy enough, it can lead to perspiration, which, in turn, cools the skin’s surface through evaporative action.
