Scott Jurek’s 2,000-Mile Journey: Powered by Plants

One of history’s most accomplished and respected distance runners, Scott Jurek has returned to the Appalachian Trail six years after setting the world record for completing the trail in the fastest time. Jurek, a plant-based athlete, is tackling the more than 2,000-mile trail from Mount Katahdin, Maine, to Springer Mountain, Georgia.

Why the Appalachian Trail? It’s one of the longest continuously marked footpaths in the world, and it winds through rugged deep wilderness, rural American communities and one of the most populated areas in the country. Like any athlete, in the years since Jurek set his last record, he has wondered: How can I return better, faster and stronger?

“Six years have passed since I set the record, and I feel like I left a lot of time on the table,” Jurek said. “I haven’t forgotten the suffering, but sometimes you have to go back to the hard places and do the hard things. I still have so much to learn and I still have more to give.”

Can he do it?

Making his highly anticipated return to the Appalachian Trail, the 47-year-old started his north-to-south run the first week of August 2021. He hopes to traverse more than 50 miles per day and complete his trek in mid-September. Crucial to his record-setting trek, he’ll start each morning with JUST Egg, a proud sponsor of his journey.
