Homemade coconut milk

Coconut milk is an excellent refreshment for hot days.
It is rich in vitamins (B1, B3, B5, B6, C, E) and minerals (Mg, Ca, Fe, Na, Se).
Coconut milk contains lauric acid, which in the body turns into a monolaurin that has antiviral and antibacterial activity.

You must have noticed that this milk is quite expensive in stores, so why not make your own homemade version of this milk. In any case it is a cheaper, better and healthier option.
To get more interesting and creamy milk I add almonds.

INGREDIENTS

  • 1/2 cup of coconut ( unsweetened shredded coconut)
  • 1/2 cup of almonds
  • 2 dates or 3 if you want to be sweeter
  • 3 cups of water
  • few drops of vanilla aroma or vanilla extract (optional)

PREPARATION

Soak coconuts and almonds in water and leave in the refrigerator over night. Then rinse them well and put in the blender. Add vanilla, dates and one cup of water and blend 1 minute on high level. After that add the rest 2 cups of water and blend on high for 30 seconds. Now filter the milk trough clean cloth ( or nut milk bag). Store in glass bowl and keep in refrigerator up to 5 days ( If you don’t drink it the same day :) )
