Nothing reminds me of home like a good home cooked meal, especially around the holidays. Every year my mom asks me what my request is for our holiday family meal. Every year my answer is the same: Corn Casserole. Corn Casserole is a staple in our holiday meals and it’s one of the easiest things you’ll make. If you are a fan of corn bread or casseroles, this meal is for you!

Ingredients

For as delicious this is, it only requires 6 ingredients!

Ingredients:

- 1 can of whole kernel corn, drained

- 1 can of creamed-style corn

- 1 package (about 8.5 oz) of corn muffin mix

- 2 eggs

- 8 oz of sour cream

- 1 stick of butter, melted

You will also need an oven safe container that can hold between 1.5 to 2 quarts to bake the casserole in.

Adding Wet Ingredients

First, you’ll want to open your cans of corn. For the whole kernel corn, you’ll want to drain the liquid from the kernels. You will pour the two cans into a large mixing bowl. Next, you will crack the two eggs into the mixing bowl. Then, you will add the 8 oz of sour cream. For the butter, slice the stick into tablets and melt in the microwave in a bowl with the paper cover from the stick on top. Once the butter is melted, remove the paper cover and use the melted butter on it to grease the container that you are baking the casserole in it. Of course, you can grease the container with a non-stick cooking oil spray, but this is one way to use less ingredients and have less waste in the recipe. Add the melted butter to the mixing bowl. Lastly, use a spatula to combine the ingredients.

Adding Dry Ingredients

Next, you will add the corn muffin mix into the large mixing bowl that holds the combined wet ingredients. You will then combine the corn muffin mix into the wet ingredients using that same spatula.

Cooking

Now to cook the yummy casserole! You will want to preheat the oven to 350° F. Then, you will want to pour the mixture into your greased oven safe container. Once the oven reaches 350° F, you can put the corn casserole in the middle of the oven for about 40 minutes. It may take longer (closer to an hour) to cook for deeper dishes.

You will know that the casserole is done when the center does seems firm and does not jiggle. You can also insert a toothpick in the center, and if it comes out clean, then the casserole is done. If the casserole is placed higher in the oven, then the top of the casserole may become browned before the dish is done cooking. If this happens, you can lay some aluminum foil on top of the dish.

With that you have a delicious and easy recipe to add to your cookbook. The only thing left is to grab a fork (or spoon) and eat! The holidays certainly can be stressful. It’s hard to know what to bring and what can last the drive to anywhere you are going. Hopefully, this is an easy solution to both of those issues.
