When You Want Too Much Eggs, Here’s The Perfect Salad For You!

Hey guys, today’s featured recipe is totally vegetarian. Yes, it’s possible to be vegetarian EVEN when you’re in Keto.

This recipe involves lots of eggs (which I love btw), and was shared by Sarah.

Macros

  • 497 cals
  • 70% fat
  • 23% protein
  • 7% carbs

Ingredients

  • 100g spinach leaves
  • 100ml egg whites
  • 5g coconut oil
  • 1 tbsp olive oil
  • 1 tbsp dash balsamic
  • 1 tbsp dash lemon
  • 87 g feta cheese
  • 2 cherry tomatoes
  • 10 black olives
  • 5 g parmesan

Let’s make it

  1. In a non stick pan, let the coconut oil heat up and melt. Add the egg whites, and once it’s half cooked, add the parmesan. Put under the grill to golden
  2. Load the feta, tomatoes and olives into the egg whites and flip over as if you’re making a calzone pizza
  3. Serve on top of spinach base
  4. Drizzle olive oil, balsamic and lemon and dig in!
