Uber low carb pork stir fry to satisfy your asian cravings

I get it. Sometimes you just want to eat your favorite Asian dish, but we all know that it could be really unhealthy, and would not fit in to your Keto diet.

With that said, today’s featured recipe is from @lillie__amy_lchf. Ready to dig in?

Keto Pork Stir Fry

Serves 1

Ingredients

  • Pork sliced in thin strips (pork medallion, preferably, but any would work)
  • One yellow bell pepper (or other color), thinly sliced
  • Handful of green beans
  • Two eggs
  • Two spring onions, chopped
  • Three garlic cloves, thinly sliced (do less if you want less garlicky taste)
  • Sesame seeds
  • Sesame oil
  • Soy sauce
  • Salt and pepper

Let’s Cook

Method:

  1. Boil the green beans until al dente and put to one side, drained
  2. Fry the pork in sesame oil
  3. Add the yellow bell pepper when the pork is cooked (not pink in the middle)
  4. Throw in the garlic and spring onion when the pepper is soft
  5. Crack the eggs over when the garlic and spring onions are soft and keep stirring until the eggs are cooked. It should scramble nicely among the ingredients
  6. Add the green beans and soy sauce when all is cooked, stir well and turn down the heat
  7. Put the sesame seeds in a separate pan, no oil, and allow it to roast, stirring regularly to avoid burning. When the sesame seeds are light brown in color, add to the first pan and stir well
  8. Add salt and pepper to taste and dig in!
