This coconut curry chicken recipe is full of flavor and one of the easiest things I have made! We have all been stuck at home for the most part so I have been making the best of it and trying out new recipes I typically wouldn't make.

Usually, you can go to a restaurant and order this dish but now is the time to start learning how to make it yourself. Not only is it going to save you money but it is always healthier to make your own food.

I hope you try this recipe out and enjoy it!

Ingredients:

  • 2 chicken breast
  • 2 tbsp coconut oil
  • 1 yellow onion
  • 1 red bell pepper
  • 3 garlic cloves
  • 2 tsp ginger
  • 2 tsp coriander
  • 1 can coconut milk
  • 3 tbsp curry powder
  • 1 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tsp celery salt optional
  • salt and pepper to taste
  • basil and parsley for garnish

Total Time: 30 minutes

Serves: 4 People

Directions:

  • Cut each chicken breast into bite-size pieces.
  • Make sure to wash and clean the chicken before handling it.
  • Add coconut oil to a medium/large pan and put the stove on medium/high.
  • Add onions to the pan and saute for about 5 minutes or until they are translucent.
  • Add chicken and cook for 5 minutes until every piece is cooked all the way.
  • Add minced garlic, ginger, coriander, and stir for 1 minute.
  • Shake coconut milk and add the whole can to the pan.
  • Stir in salt, pepper, and curry powder.
  • Bring to a boil and then lower to a simmer.
  • Add lime and brown sugar, stir everything together.
  • Cover and simmer for 5 minutes.
  • Garnish with basil and parsley.
  • Serve over white rice.
