Garlic Butter Parmesan Homemade Pasta with Shrimp

I am a true lover of garlic and butter. Who doesn’t love garlic and butter? I mean… it is garlic and butter, am I right? So, that is what brings me to this delicious meal that my family just cannot get enough of. This garlic butter pasta is an Italian dish with a southern flare, so beware the spice!

Included in this recipe is a recipe for homemade pasta by hand (I don’t have a pasta maker like some of you may not, but feel free to use it if you have it!), garlic butter Parmesan sauce, with roasted frozen broccoli, and croissants. I usually prefer to have my veggies fresh but it is such a convenience to just throw some frozen broccoli in the oven. And with this quarantine… Well, you get it, you are right there with me.

Anyway, first I will give you the recipe for the pasta. I love making pasta and bread by hand because it allows me to punch, fold, and a dropkick that flour mixture. Oops, did I say dropkick? I meant to add love. No anger issues here.

This is a standard pasta recipe that will be cooked in a non-traditional way.

Homemade pasta Ingredients:

4 large eggs

2 1/2 cups of flour

1 tablespoon of olive oil

1 teaspoon of finely ground sea salt

Directions:

  1. Place flour in a mound on large cutting board and create a hole in the center with your hand or spoon. In that hole add your eggs, salt, and olive oil. Mix the eggs without incorporating flour until well combined.
  2. Gradually mix surrounding flour into the egg mixture until the egg mixture is nice and thick.
  3. Then use your hands to fold in the rest of the flour to form a loose ball. Knead ball for about 10 minutes or until you can poke the dough and it springs back to its original place. Note: If the dough is too wet sprinkle in extra flour. This should be a dry dough.
  4. Form a ball and wrap tightly in plastic wrap. Let dough rest for 30 minutes to relax gluten for easy roll out.
  5. Roll out pasta dough into a rectangle. Fold length-wise and cut into the size you would like.
  6. If not using immediately dry your cut pasta out on a pasta drying rack or in little balls with about a tablespoon of flour to keep them from sticking together. You can keep it like this for about 30 minutes before you need to cook it.

To make the garlic butter Parmesan sauce you need to cook the pasta while you are making the sauce to incorporate some of the pasta water.

Garlic Butter Parmesan Pasta with Shrimp Ingredients:

1 tablespoon of base (chicken, beef, or vegetable)

4 tablespoons of butter

3 cloves of garlic or 1/3 cup of minced garlic

1 to 2 tablespoons of hot sauce (you can add more or less)

1 tablespoon of crushed red peppers (more or less depending on your spice level)

1/4 teaspoon of black pepper

1/2 cup of grated Parmesan

1/3 cup of freshly chopped parsley or 3 tablespoons of dried parsley

1/4 pound of large shrimp cut in half

Directions:

  1. Cook pasta in about 3 cups of water and base, I used beef base here, for 1 to 5 minutes. Check pasta texture so as to not over- or under-cook. Reserve a fourth cup of pasta water.
  2. While the pasta is cooking, heat oil and melt butter in a large skillet over medium-high heat. Add garlic and hot sauce and cook for 2 minutes. Make sure not to burn the garlic.
  3. Turn heat to low then add pasta water and allow to simmer for about 1 minute. Season shrimp with a little salt to taste. Add pasta, shrimp, parsley, and Parmesan. Cook until shrimp are done, approximately 3 minutes.
  4. Serve immediately!

Roasted Frozen Broccoli Ingredients:

16-ounce bag of frozen broccoli

2 tablespoons of olive oil

1/2 teaspoon of salt

1/4 teaspoon of black pepper

1/4 cup grated Parmesan

Lemon halved

Directions:

  1. Preheat over to 450 degrees. Place pre-lined baking sheet in oven while preheating.
  2. Toss frozen broccoli in olive oil, salt, and black pepper. Note: Do not thaw broccoli. Carefully remove baking sheet from oven and place broccoli mixture on the sheet. Roast for 15 to 18 minutes.
  3. Remove from oven and switch oven to broil. Scatter Parmesan over broccoli and broil for 1 to 2 minutes making sure not to burn the broccoli but still melting the cheese.
  4. Squeeze half of the lemon over broccoli and toss to combine.
