Italian Sausage with Onions, Pepper, and Rice

I love Italian sausage with onions and peppers on a nice soft hoagie roll. But, I really did not feel like making bread. Too bad for me, huh? I can’t have my Italian sausage with onions and peppers. Well, apparently that’s where we were all wrong! I made these modifications and it was the best tasting, easiest, and quickest meal ever!

It’s also a great way to use all of that rice you brought when you thought the apocalypse was here! Haha! It’s okay, we were all there! There were panickers, people panicking because of panickers, and people who didn’t care. No matter which group you were in, you probably brought a lot of rice. I know I did. Here is just one item you can make to get rid of that rice in a very delicious way.

Ingredients:

3 tablespoons olive oil

1 pound Italian hot or sweet sausage links in the casing (I used half hot, half sweet)

2 cups diced sweet Vidalia onion

2/3 cup of red bell pepper

2/3 cup green bell pepper

2/3 cup yellow bell pepper

3 to 4 cloves of garlic, minced

2 cups long-grain rice

2 1/2 cups beef broth

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon onion powder

Directions:

  1. Remove sausage from casing. Saute in a deep pan with olive oil and onions until sausage is cooked through. Note: Make sure to crumble the sausage as you cook it.
  2. Add in bell pepper, garlic, onion powder, rice, and chicken broth and stir. Cook covered for 20 minutes or until all water has been absorbed into rice and rice is soft.
  3. Taste and add salt and pepper as needed. Serve immediately and enjoy!
