Mashed Potato Salad

This recipe started off as potato salad and along the way was twisted and turned into something else entirely. At first, I was upset about the fact that I didn’t have all of the ingredients for potato salad but after adding modifications for mashed potatoes, I was in love. Not to mention my husband who hates potato salad. After my husband found out he loved this modification he couldn’t stop eating it. Only problem with that is, I made a small batch! Well, why wouldn’t I, since I’m the only one who eats potato salad.

With this recipe, I had already started adding the ingredients for potato salad before realizing I didn’t have everything. I know what you’re thinking, rookie mistake. However, I’m super excited now that I made that mistake and get to share it with you all! Here it is! My new delicious mashed potato salad.

Ingredients:

1/4 cup mayonnaise

1/3 cup sweet relish

1/4 cup chopped onions

1/4 cup chopped green pepper

1/8 teaspoon paprika

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1 tablespoon butter

2 large russet potatoes

2 large eggs

Directions:

  1. Peel and boil potatoes in lightly salted water until soft. Add eggs to boiling water and cook with potatoes. Note: make sure you boil the potatoes enough to mash like mashed potatoes.
  2. Remove water and mash in a large bowl. Add butter and mix until incorporated.
  3. Peel and chop eggs. Add remaining ingredients and mix until it’s all incorporated. Note: You can add the paprika to go over the top. It depends on what you like visually.
  4. Serve immediately hot or place in the refrigerator to eat cool. Note: Serve hot only in the beginning. Do not microwave once placed in the refrigerator.
