More Shrimp and Veggies

A few months ago, I shared with you a recipe that included shrimp and veggies. I know! So tasty.
However, I recently wanted to make it again and found myself in a bit of a problem because I couldn’t find all of the ingredients. It was as if cauliflower had suddenly been outlawed in my city.
Under such circumstances, what’s a gal to do?
Well, she is to find substitutes, and that’s exactly what I did. Keep reading to find out how this turned out.
Ingredients
- 1 pound peeled and deveined shrimp (the ones I got were very big, so I cut them in half to make chewing easier on me; don’t shoot me!)
- 2 large carrots, diced.
- 1 large cousa squash (“Mexican” squash), diced
- 8 Brussel sprouts, cut in quarters
- 1 red bell pepper
- Salt to taste
- Pepper to taste
- Ground turmeric to taste
- Ground ginger to taste
- 2 tablespoons avocado oil
- 1 tablespoon butter
