Non-Bake Custard Fridge Tart

One of the best memories from my childhood, reintroduced by a not-forgotten lover

Our youngest daughter moved out at the end of 2020, to move in with her boyfriend, into a small one-bedroom flat. With her boyfriend being almost two meters tall, they opted for his bed, so her bed stayed here with us, in her old room.

That, of course, gave and still gives her the perfect opportunity to come here for an overnight stay.

She was here about a month ago, and at the time, I had just made a fridge tart for the first time since I moved to the Netherlands at the end of 1994. She tasted it and immediately loved it, even though it kind of failed.

“Next time I visit, will you make one again?” she asked, and I promised.

A bit of history

I grew up with fridge tarts. It was something either my mom or my dad could quickly whip up and wasn’t expensive at all.

There are so many variations on the theme, from a simple custard version, to the more complicated ones with granadella (passion fruit) or pineapple or even chocolate bars.

The one thing they all have in common is that you don’t have to bake them. They are fridge tarts…
