Another recipe that can be doubled or tripled to your heart’s content. As long as you have the patience. They are more fiddly than the Salami Crisps. They look and taste great paired with the Salami Crisps. And looks like you have slaved over the proverbial stove.

Parmesan Crisps

Makes 9

Ingredients:

  • 3/4 cup finely grated fresh Parmesan
  • 1 teaspoon flour

Preparation:

  • Preheat the oven to 350 F or 180 C and line a baking sheet with parchment paper.
  • Stir Parmesan and flour in a bowl.
  • Spoon cheese mixture by tablespoonfuls in mounds, 2 inches apart on a prepared baking sheet. Spread mounds into 31/2 inch rounds.
  • Bake crisps in the middle of the oven until golden, about 8 to 10 minutes.
  • Cool crisps on a baking sheet and remove with a metal spatula.

Crisps can be stored in an air-tight container at room temperature for up to 3 days.

This is a versatile recipe. The crisps can be used to decorate salads or soups. Flavorings like pepper and dried herbs can be added. They can be turned into fancy cylinders by making them bigger and shaping them around a rolling pin while still warm. Or shaped into a bowl for salad leaves — just drape the warm crisps over a bowl. Star shapes for a festive look? Hearts? Whatever shape, they are delicious.
