Potato and black bean salad

A hearty but refreshing meal for the summer days. It’s so easy and quick, that there’s no excuse to not eat healthy.
Ingredients for two persons:
- 450–500g potatoes
- 200g black beans
- 1/2 celery stalk
- 1 cup cherry tomatoes
- a bunch of spinach
Method:
- Boil the potatoes in salted water for 20 min.
- While they are cooking, chop cherry tomatoes, celery, rinse and drain black beans and prepare the spinach.
- When the potatoes are done, remove them from the pen and cut them in wedges.
- Toss all the ingredients in a bowl and season with 2 tablespoons of olive oil and juice of half a lemon.
