Potato and black bean salad

A hearty but refreshing meal for the summer days. It’s so easy and quick, that there’s no excuse to not eat healthy.

Ingredients for two persons:

  • 450–500g potatoes
  • 200g black beans
  • 1/2 celery stalk
  • 1 cup cherry tomatoes
  • a bunch of spinach

Method:

  1. Boil the potatoes in salted water for 20 min.
  2. While they are cooking, chop cherry tomatoes, celery, rinse and drain black beans and prepare the spinach.
  3. When the potatoes are done, remove them from the pen and cut them in wedges.
  4. Toss all the ingredients in a bowl and season with 2 tablespoons of olive oil and juice of half a lemon.
