Let’s do a thought experiment. Imagine for a second a certain humble individual grew up in the mountains of South America.

This wasn’t the most agreeable character at first, but became more social with the neighbors over time. From here it traveled the world feeding the hungry and developing many facets of the modern agriculture industry around it.

This simple character also adopted itself to the modern world and changes with the drastic tastes across the earth. It also started a fashion trend at the court of Versailles in France. Eventually it won over its early detractors far from home, becoming loved everywhere it placed its foot on the earth.

Sounds like an impressive biography doesn’t it?

This is just a brief introduction to the subject our history lesson today — the potato. It prefers to keep under cover and out of the light of day, but its biography and history is way overdue. Although our simple spud didn’t authorize this history of its achievements, I’ve taken it upon myself to write its chronicles and sing its praises.

You may see it as a simple French fry or a side to diner, but this simple tuber has enabled much of the world to avoid the famine and starvation that’s so common…
