Avocado and Grapefruit Salad

Ingredients:

1 head of romaine lettuce

1 English cucumber

1 red pepper

1 avocado

1 red ruby grapefruit

1/4 cup of sesame seeds

2 tbs fresh mint

2 tsp fresh cilantro

Dressing:

1/2 cup of olive oil

1/4 cup of fresh lemon juice

1/4 cup of grated yellow or sweet onion

1/2 tsp. Celtic salt

Directions:

For the dressing, simply mix it all in a glass jar. For the salad, put the lettuce, cucumber and bell pepper in a large bowl and toss. Pour part of the dressing and toss again. Peel and slice the grapefruit, removing all white. Add avocado, grapefruit, sesame seeds, mint and cilantro, toss again.
