The best chef in town
Two weeks have gone by, and I’m thankful for all the insights this challenge has provided me.
Moving on to juicy things:
Regarding using the bicycle as the only means of transportation, the arrival of the polar cold has certainly not helped. Today, for example, I was too cold to move around on my bike and gave in to taking the metro.
As for my diet, I’ve experimented a bit in the last week. One of my resolutions was to use the microwave as little as possible and to eat foods that don’t need to be heated.
I took on this challenge a bit intimidated, partly because I’m not a great cook, and my cooking skills have suffered as a result. However, I gave it a try anyway. I set a goal for myself to eat something that doesn’t need to be heated at least once a day, either for lunch or dinner. Sometimes my dishes were quite plain, like the other day when I had a sandwich with cream cheese and carrots. At times, though, when I had more time and put in more effort, the results of my recipes surprised me!
I found some solutions and recipes that I actually really like, and I wouldn’t have discovered them without this challenge.
Here are some of my best ones:
- Cubed feta salad with cucumbers, cherry tomatoes, chickpeas, and sesame seeds.
- Store-bought hummus, baby carrots, cucumber slices, and cherry tomatoes.
- Smoked salmon, cream cheese, capers, red onion, and bagels.
- Crostini with Gorgonzola, Walnuts and Celery.
- Piadina with hummus, avocado, tomatoes and arugula.
Of course, it’s not gourmet cuisine, but I’m glad I got the change to experiment and be creative about food, also I’m proud of what I’ve achieved, considering my skills.
